Engineered nanostructures demonstrate versatile and innovative advantages in a plethora of applications, also coloring. Current focus on metasurfaces for color printing just represents the state of the art of a long story that puts a date even on the Ancient Rome age. But also the physical principles set behind different strategies for color manipulation in nanotechnology deserve an itemized analysis. In this dissertation we review the leading techniques in structural colors based in plasmonics. Some procedures developed in the University of Valencia are also presented and discussed.
